In 15th day of lunar calendar each month, my mom usually chooses one of Vietnam Recipes Vegetarian
to cook for all members in family. It becomes our habit from many years
ago. Eating these vegetarian food are not only delicious, but also

Ingredients:
200g rice pancake flour (Bột Bánh Cuốn) – Buy at Vietnamese Markets
450ml water, ½ teaspoon salt, 2 tablespoons oil.
2 slices of fried tofu (150g)
1 carrot
10g Jelly ear mushrooms
Vegetarian Magi’s stuff, salt, spring onion, pepper, soya sauce
Making sauce: soya sauce, sugar, chili, roasted peanut, Cự Đà soya sauce (optional)
Basil leaves, bean sprout.
Process:
Step 1: Slice tofu thinly. Peel off the cover of carrot, clean and slice fiber. Soak mushrooms, cut off the roots and slice small. Clean spring onion and slice small as well.

Step 2: Heat 2 teaspoons oil, add sliced carrot and spring onion into pan and fry in 5 – 7 minutes.
Step 3: Next, add more sliced mushrooms with a little salt into pan.
Step
4: Then, continue to add sliced tofu with a little soya sauce, use
chopsticks to stir gently, season again to suit your flavor. Fry from 5 –
7 minutes, turn off the heat and sprinkle more pepper on face. Pour

6: Mix rice pancake flour with 450ml water, salt and oil together. Stir
well. Use nonstick pan to fry these rice pancakes. Heat 1 teaspoon oil,
scoop 1 big spoon and pour into pan, spread well, cover the pan and
wait for 2 – 3 minutes before take it off pan. If you do not want to
make this step, you also can buy rice pancake at Vietnamese markets or
using fresh Pho noodle is all delicious.
Step 7: Spread rice pancake on plate, use a small brush to spread a little oil on face, add some basil leaves on it.
Step 8: Use spoon to scoop a little mixture in step 4, put on basil leaves and roll this rice pancake carefully.
Step
9: Making sauce: Mix sugar, minced chili and soya sauce/ Cự Đà soya
sauce into bowl, mix well, season again to suit your flavor or not.
